Preparing a brunch for the Queen in my life, my wonderful mother as well as my awesome aunt this past Sunday was actually, fun! & not to mention yummy! I just wanted to share with you a really easy {and adorable} recipe, as well as some photos from our Mother's Day Brunch!

Egg in a Basket: I made the Eggs in a Basket from the recipe which is linked above, my sister actually found the recipe. NOTE: If you are in a hurry and need to do the potatoes in the microwave, go ahead! Just peel them first, and do them for no longer than 3-4 minutes, depending on the size of the potatoes. You don't want to overcook them because they cook while they are in the oven as well! So, yes I do know what to do next time in order to make it look just right. To get it out of the muffin/cupcake holder, I used an icing spatula, liek this one and went around 2-3 times it popped right out! Of course you can put in your own stuff, like cheese, peppers, etc. to make it more filling.

Biscuits: My sister also discovered the wonders of parchment paper when she was baking the biscuits, they were de-lish-ous!
Make your Own Fruit Parfait Station: This was super-super easy. In one bowl there was yogurt, In separate bowls I had blackberries, blueberries, and raspberries. {You can have whichever fruits you would like}. Instead of using granola, I actually just poured out some Honey Bunches of Oats with Crispy Almonds Cereal. This was an awesome substitute for granola for a number of reasons:
1. I didn't have to slice and toast almonds + granola.
2. Because this cereal is low in sugar the cluster and cereal added the perfect crunch and a bit of sweetness! to the parfait.
3.I knew it would be easy to put back!
Salsa: I personally think the salsa went perfectly with the eggs and hashbrowns. The bell peppers and onions added a nice crunch plus it gave a nice small bit kick of heat to the dish!
Orange Juice, Coffee, and Water: Choose whichever beverages you would like! Pick something that really goes along with your meal! These went perfect since it was a brunch.
Thanks to the sister for coming up with the awesome idea & doing the dishes, I love you!
And of course, the table wasn't complete without beautiful roses for both my mom and aunt :)
